- Some fat: cream, milk, Crème fraîche

- Step 1 Use a non-stick pan so that the eggs don’t get hard, crunchy layers.
- Step 2 Use a well-greased pan. Less greased pans result in hard edges. Add some butter to the pan and let it fully melt, but don’t let the butter go fully brown before adding your egg mixture.
- Step 3 For fluffy eggs, use 2 eggs, but discard one egg white use just the second egg yolk.
- Step 4 It is important to add some fat to get creamy but fluffy eggs. Choose milk or cream, (not skim). Crème fraîche is excellent for scrambled eggs, as is sour cream (again with fat, not skim). Half and half is another good option.
- Step 5 Keep the heat low and stir constantly.
- Step 6 While stirring, Remove the pan from heat ten seconds at a time.
