Some recipes are best suited served over soft ice. Soft ice is not as hard as ice cubes, but harder than slushie ice. You may have had Soft Ice at restaurants like Sonic. It is often served at Drive-In type restaurants, which remind me of the summers of my youth. While soft ice tends to melt faster than hard ice cubes, for some drinks the light crunch of the ice really adds a delightful treat.
It is easy to make soft ice yourself at home with a big bottle of carbonated water like seltzer water.
HOW TO DO IT
The secret is seltzer water, any large, generic grocery store brand bottle will do. If you are entertaining, consider a few of the 2-gallon size bottles.
To make the ice, fill smaller to medium-size ice-cube trays with the seltzer, let them set a few hours. Right before using them, give them one or two hard whacks to break them up a bit.
